The cuisine will delight enthusiasts fed up with the usual choice of brown, pink or red curry. Lamb chops coming out of the finest tandoor ovens are pink in the middle, tasting of great spicing, not charcoal. Mushroom Pakoras show how they should be done; Murgh Ki Bootham, chicken thighs with herbs and spices, along with a little cheese are a new-wave standout.
