Red’s True Barbecue is Now Open in Manchester

Praise be, there's a new authentic Southern US-style smokehouse restaurant open in Albert Square.

Red’s takes an obsessive and evangelical approach to celebrating the regionality of American barbecue. Cuts of pork, chicken, beef and sausage are dry rubbed in spices and left to marinade for 24hrs before being cooked low and slow over a secret blend of hickory and fruitwoods for up to 23 hours.

And the results, as we discovered, are divine.

If the thought of beautifully tender, moist, flavour-packed meats fills you with a deep, steady longing, this is a place you need to visit.

The Pitmaster, The Academy and The Smokers

The words 'slap it on the barbie' have never been uttered here. They take their meats and five different types of regional BBQ sauces very seriously indeed.

All their meat is locally sourced from approved farmers, and smoked fresh each and every day in custom built Oklahoman smokers, so you know you're eating the good stuff. And the Red’s chefs, aka 'Pitmasters', have been trained to get the absolute best out of it.

The commitment to authenticity is evident throughout. The Pitmaster team are regulars on the British competition barbecue circuit, having picked up numerous awards for their Pulled Pork and Brisket. We also learned of an annual pilgrimage to the US where each year the founders hire a Winnebago and travel across the Southern states eating BBQ five times a day, all in the name of research and continual improvement. It’s a tough job...

It all sounds like a lot of effort until you bite into one of their plates of meat..

Then you get it. They do all that because it works – this food tastes fantastic.

The Neon, The Craft Beers, The Cocktails

You go to Red’s True Barbecue for the meat but that doesn't mean they'll make you sit in a scruffy room sipping warm beer while you eat it.

The décor is spot-on; the Southern states seen through neon-framed shades with the kind of features you want to stuff under your jacket and take home.

The drinks hold up their end of the bargain too: craft beers, boilermakers, buckets, cocktails, shakes, floats and wine. All in all, we reckon you’ll be left wanting to shout ‘let there be meat’ and then slumping into a happy meat coma.
