Southern 11 to open in Spinningfields

RESTAURANT operator Southern 11 is opening a new restaurant and outdoor BBQ in Spinningfields.

The BBQ will open in hardman Square on Friday April 29 and the rib shack restaurant will officiallyu open in June.

The 16ft long barbecue trailer is equipped with a wood-burning oven imported from Oklahoma in the USA, and will allow the meat to be cooked for up to 20 hours to create a smoky flavour.

Southern 11’s meat is locally sourced - the chicken, pork and baby back ribs are from Greaves Butchers in Lancashire, while the beef is from the Duchy of Lancaster-owned Burnham Farm.

Entrepreneur James Hitchen, 28, whose family previously owned Wigan-based Hitchen Foods, is the man behind Southern 11. The 2,500 sq ft restaurant unit, next to Pure Gym, will seat 85 indoors and 30 outdoors.

spinningfieldsinterior 1.jpgSouthern 11 opened a trial site in The Arndale Centre in March 2010, and Hitchen has decided to take the next step and develop a gourmet BBQ eatery in the city centre.

“I have been completely inspired by the barbeque techniques found in the eleven Southern states of the USA, hence our name," he said.

“Running our rib shack in Spinningfields is a great opportunity for us to get our brand out there, to build word of mouth about Southern 11 and introduce people to this fantastic flavoursome food ahead of our restaurant opening in June.”
