RESTAURATEURS usually only venture into the kitchen to tell people he loves their work or to fire them.

There might be tasting sessions and debates over kitchen kit but usually the engine room of the restaurant is the realm of the chef.

So it’s curious and interesting that during the forthcoming Guestrant at Chorlton’s excellent Elektric bar, the co-founder and boss of Tampopo restaurants David Fox will be putting his culinary skills to public test. The spotlight will be on the affable owner of casual dining kings of the city.

He will have help though. His head chef from the Triangle Tampopo in Exchange Square in the city centre, Jacko Cook will be helping.

Nice name that. A chef called Cook. And a restaurateur called Fox.

The Fox and the Cook. Sounds like an Aesop’s Fable. How very charming. Maybe they should tell us a story after the dinner.

Story-telling aside, the pair aim to impress Guestrant diners with a 4 course meal of Vietnamese cuisine, including recipes picked up from their travels around Vietnam.But why on earth does Fox want to to put himself under this pressure?

“I love food and I love cooking,” he says (We’re glad about that given your job David). “And I’ve been lucky enough to attend cooking courses in numerous schools in Thailand, Vietnam, Malaysia and Indonesia. I’ve also recently returned from Malaysia and Indonesia where I attended a cooking school in Kuala Lumpur and Lake Toba with the kids. Eastern cooking’s in my blood so to speak."

“Guestrant is an opportunity to produce things I’ve learnt along the way,” he continues. “Some dishes we’re trying we already do at Tampopo and some may make their way onto the menu.

“In terms of regular cooking, the brutal reality is my chefs would not take me on. To cut it with us you need to work a minimum of 15-20 hours a week to feel the speed and get the quality consistent. We have an internal target of 10 minutes to get great quality food to the table. I couldn’t achieve this myself. Guestrant allows me to get my fix of helping out though.”

If it all goes wrong too he can make a quick get-away. Fox lives round the corner.

“The fact that I can have a couple of beers after the ‘gig’ and then walkhome also helps,” he says.

Let’s hope he doesn’t leave all the washing up to Jacko Cook though. Then again given those names there may be another member of staff called Suds.

‘Guestrant goes to Vietnam’ takes place on Monday 21 March from 7.30pm. Tickets cost £25 in advance and it’s a first come first served.
