Lovely cakes: Fraise des Bois

Lynda Moyo, Health and Beauty editor for Manchester Confidential, was having her fifteenth haircut of the week when she ate cake in Trevor Sorbie’s salon.

These came from Jason Chisholm, a handsome chappie, and champion cake maker based in Century Buildings in the city. Lynda was impressed, so later that day on her sixteenth visit, she got Chisholm’s details and used the power of the press to lig some samples for the office.

The advice was simple.

“Bring some cakes in and we’ll eat them for you for free,” said Lynda. “But don’t bother with cupcakes. Between you and me, the editor discriminates against cupcakes on grounds of their tweeness. He’s cupcakeist and proud of it. Shocking really.”

The result was a box full of proper cakes delivered to Confidential. Not lily-livered half-cakes of cloying fluffiness but lemon cakes, lime bars, shortbread and chocolate brownies of professional depth. The shortbread was perfect, the lemon cake delightful and the lime bar standout. The chocolate brownies disappeared so fast there were no descriptions left to make.

Chisholm knows what he’s doing, knows how to balance the sweetness in cakes to entice you in but not leave you feeling ill. The name of his company is Fraise des Bois which is French for Wild Strawberries.
