Divine Dish For Dads At Cicchetti

Francesco Guarracino, chef at King Street West’s chic dining hit San Carlo Cicchetti, has created a unique dish for Father’s Day.

Francesco’s Paccheri Ripieni di Peperoni – stuffed seafood Paccheri pasta on a sweet pepper sauce – is packed full of the finest seasonal ingredients flown in from across Italy.  As a child at home in Sorrento, Francesco would watch mesmerised as his father,  two-star Michelin chef Luigi Guarracino, created a sweet pepper, seafood and pasta dish. It went on to become the inspiration for today’s special dish.

110613_Cicchetti_Fathers_Day_010Following in his father’s footsteps, Francesco is now a celebrated chef. Winner of the prestigious Italian Federation of Chef’s ‘Best Chef under 40,’ title, he later became a member of the Italian Michelin team and is now at the helm of Manchester’s San Carlo restaurants.

Perfect for Father’s Day, Francesco has taken one of his father’s favourite dishes and given it a modern, San Carlo Cicchetti-style twist.

Francesco said: “I have such fond childhood memories of watching my father make this spectacular, colourful summer dish at work in Sorrento. Bursting with harmonious flavours from the sea and the land, creating this new dish in honour of my father has been a labour of love for me.”

“I’ve taken the key components of his dish – ricotta from a small village in Sardinia, mussels, prawns and calamari, red and yellow sweet long peppers from Rome and air dried Paccheri pasta from Vesuvius – and instead of mixing them all together, I’ve separated and concentrated them. The special pasta is stuffed with ricotta and seafood and tied with leeks. The peppers have been roasted and blended to produce a pure sauce.”

“At San Carlo Cicchetti ingredients are king and this dish is a journey - I want people to enjoy experiencing each superb ingredient in turn before discovering how wonderfully they complement each other. This dish is a riot of summer colour with a smooth, sweet finish.”

Francesco will be creating this spectacular dish at San Carlo Cicchetti in celebration of Father’s Day from Friday 17 through to Sunday 19 June. It will cost £11.50.
