Easter Lamb Special From San Carlo

ALDO Zilli, star chef at San Carlo Group restaurants, has created a special, celebratory dish for Easter weekend. His Easter Lamb Rack marinated in sun dried tomato and herbs is served with baked leek and truffle mash – and is full of the tastes of Spring. It will be available from this Saturday (19 April) until Easter Monday at all San Carlo restaurants in Manchester and Hale.

Aldo says rack of lamb is the most elegant of red meats and perfect for a Spring feast:

“In Italy, Pasqua (Easter) is all about new season lamb. It's served with spring vegetables and is found on every table across the country. My dish marries lamb with rosemary, marinated in sun dried tomato and herbs. This is a fab combination for lamb and the fresh, seasonal ingredients sing. The truffle mash and leeks add a rich and comforting touch.

Gordo’s Notes

Gordo ate this dish last Friday, 11/04/14, at Cicchetti; it was everything described in this piece. All brown and crispy on the outside, whilst when cut through, perfectly pink in the middle.

The herby aroma, matched with the gutsy flavour of home-dried tomatoes, makes for a winning dish.

San Carlo Fiorentina

Named after the region of Florence famed for its steak recipes, San Carlo Fiorentina in Hale is the latest restaurant and bar from San Carlo.
