24 Bar And Grill Responds First: 'Sole Manchester Style'

AFTER our story last week (click here) about rediscovering a Manchester dish,  'Sole Manchester Style’, we've had lots of responses.

This followed the finding of Hering's Dictionary of Classical and Modern Cookery in of all places a Starbucks.

So it was good to get this message from Neil Woodward at the 24 Bar & Grill (ex-Obsidian) on Princess Street (0161 238 4348). 

'Our version of the 'Sole Manchester Style’ is on the specials board tonight,' Neil wrote. 

'It’s been developed by Nathan Thornburn (our sous  chef) and we think it’s a winner. 

'The lemon sole is lightly poached, (boiled) in seasoned milk with confit shallot puree, lightened with crème fraiche, shallot butter sauce flashed with anise and finely chopped chervil and crispy shallot rings. 

'As you say in your article, it's better than the Manchester tart. 

'Come and taste it – we will.'

We will Neil, we will.
