And if the permissions are granted when will SoLiTa Didsbury open its doors. "In about four weeks time," says Sotgiu.
South of Little Italy, aka SoLiTa, in the Northern Quarter is grabbing hold of the former Cibo site in Didsbury, off School Lane, and converting it into a mirror of the original.
With a couple of points of difference.
As Franco Sotgiu tells Confidential: "The food will be a little bit lighter, more suited to a suburban crowd. There will be the trademark burgers and other dishes but we'll be emphasising the grill with more fish and chicken dishes. We'll be keeping some of the fixtures and fittings but freshening the place up and ripping out the kitchens and using an Inka grill. There will also be more salads."
Salads? Is the lad losing his alpha-male tweetaholic mojo?
"Not a bit of it," laughs Sotgiu whilst talking and tweeting, "but we're not in the city centre and so we have to cover more bases. We also have a large outdoor area so those dishes are more suitable."
And given it's Didsbury and the pram sorority are out early and in force what about breakfasts?
"We'll be open from 10am, seven days a week," says Sotgiu. "There's 150 covers indoor and outside and we're really looking forward to getting on site. Of course, the whole thing is subject to official permissions being granted."
And if they are granted when will SoLiTa Didsbury open its doors.
"In about four weeks time," says Sotgiu.

What happened to Cibo??
It was diabolical on all levels, food, drinks, service, people tended to go once and vow never to again.
Before I got to the pram sorority comment, I was thinking yummy mummy ville will be happy with light dishes, Ill be going for the burgers
I never understood why ManCon (particularly Gordo) raved about Cibo to be honest. I went once and, as anon above says, vowed never to again. Probably the worst place I've been to on ManCon's recommendation. Can't wait for Solita to open though :)
