WE'VE been hearing a lot about the Italian aperitif Aperol Spritz recently. Mainly because they've just erected a big outdoor bar complete with ping-pong table, deck chairs and giant orange cushions, on the Spinningfields lawns outside Confidential Towers
It's a chic, low(ish) alcohol summer cocktail served in piazza bars to people who want to make the night last.
But even before their current marketing drive, this refreshing Aperol Spritz was seeping its way into our drinking conciousness.
Aperol is a liqueur (11% alcohol) made from herbs and roots that give it a pleasing bitter-sweet taste. The Spritz combines Aperol with Prosecco and soda water to create the Italian equivalent of Pimm's – it's a chic, low(ish) alcohol summer cocktail served in piazza bars to people who want to make the night last.
It's also very simple to make at home. The recipe follows a mnemonic 3-2-1 formula: 3 parts Prosecco, 2 parts Aperol, and 1 dash of soda water over ice in a large wine glass. Add a slice of fresh orange, find a sunny spot, and let the evening begin.

Aperol Spritz Recipe
Fill a large wine glass with ice and pour in:
3 parts Prosecco
2 parts Aperol
1 dash of soda water
Garnish with a slice of fresh orange
